This document sets out the safety and hygiene requirements for the design and manufacture, installation, training, use, cleaning and maintenance of cutting machines with a motor-operated circular knife of more than 150 mm diameter with a product holder. These types of cutting machines are intended for use in shops, restaurants, supermarkets, canteens, etc. for cutting food. This document covers all significant hazards, hazard situations and hazard events related to cutting machines when used as determined by the manufacturer. This document applies to hazards that occur during all phases of the machine's life, as described in EN ISO 12100:2010, 5.4.
