Sensory analysis - Methodology - Triangle test (ISO 4120:2021)
This document specifies a method for determining whether there is a perceptible sensory difference or similarity between the samples of two test materials. The procedure is based on the "forced choice" principle. The method is applicable if there is a difference in a single sensory feature or in several features. The method is statistically more meaningful than the duo-trio test (described in ISO 10399), but has a limited application to test materials that leave strong overlapping and/or post-acting olfactory/gustatory impressions. The method is also applicable if the nature of the difference is unknown (i.e. it does not determine the size or direction of a difference between the samples, nor does it provide indications of characteristics responsible for the difference).
