Commercial dishwashing machines - Hygiene requirements and testing


This document specifies hygiene requirements for the operation of commercial dishwashers (hereinafter referred to as dishwasher) and the tests that must be carried out on these machines. It defines requirements for achieving an appropriate hygienic state of the dishwasher treated in dishwasher. This document also contains a guide for hygienic and proper operation, the care and maintenance of dishwashers. In addition, procedures for checking a hygienic operation are determined. This document is applicable for dishwashers that are used in a commercial environment to clean rinsing goods that are used in contact with food, such as: B. plates, dishes, glassware, cutlery, reusable container and similar articles. Dishwashers are in commercial kitchens, such as B. in restaurants, canteens, hospitals, and in companies, such as B. used in bakeries and butchers. This document is not applicable to cleaning machines for home use, not for cleaning and disinfection devices for the processing of medical devices and not for machines for industrial use.
