Microbiology of the food chain - Preparation of test samples, initial suspension and decimal dilutions for microbiological examination - Part 5: Specific rules for the preparation of milk and milk products (ISO 6887-5:2020)


This document lays down rules for the preparation of samples of milk and milk products and their dilutions for microbiological examinations where the samples require preparation different from the general procedures described in ISO 6887-1. This document shall exclude the preparation of samples for such counting and detection methods, which describe the details of sample preparation in the relevant international standards. This document is intended for use in connection with ISO 6887-1. This document shall be applied to: (a) milk and liquid milk products; (b) dried milk products; (c) cheese and cheese products; (d) casein and caseinates; (e) butter; (f) milk-based ice cream; (g) cream, desserts and milk-based sweet cream; (h) sour milk, yoghurt, probiotic milk products and sour cream; (i) milk-based infant and infant food powders, with or without probiotics.
